Pop-Over Challenged!!

I'm popover challenged!! I can't for the life of me get this right!! I bought the "popover pan", read the directions carefully.. and even followed them.. with only a tiny bit of luck.. See these popovers are suppose to puff up like crazy... mine only puff slightly like a muffin top.. not a huge top!! Any ideas????? And yes.. .I pre-heat the pan and pour in the batter.. even turned up my oven temp..??? I'm out of ideas...

Lisa Joy Nelson Nyquist



Lisa Joy Nyquist, Loving Mother Age 44 of Woodbury Passed peacefully January 20, 2010.
Preceded in death by her mother, Barbara Nelson. Survived by her children, Nicole Roth and Kyle Nyquist; father, Harold Nelson; brothers, Craig and Todd.

Memorial service 12:30PM Saturday at HOLCOMB-HENRY-BOOM-PURCELL, 515 Hwy 96 W.
At Mackubin, Shoreview (651-482-7606).

Horse Watching....




I'm taking care of a customers horses and pony this weekend. It's been 2 months since we've been caring for any horses. I'd kind of forgotten how much I enjoy just being around them. It's just not fun to stand outside and freeze when it's below Zero.. Thankfully, we have a nice sunny, 30*F+ day!

Oh that horse smell.. should have changed my clothes...

Swim Lessons





Today the kids started swim lessons. Logan moved up to level 2 and Celina level 4. My kids were excited to do swimming until this morning. Logan had a melt down before we even left and was refusing to swim. He finally calmed down and had a great time during his lesson. Next up was Celina, she was ready for her lesson but when they called all the kids over to the swim groups she refused to get into the water. It's soooo frustrating to see your children wanting to do an activity but have a melt down in the process.. I'm not sure why, I'd rather just have them try something then to never to attempt. hum... there is always next week.. They do know how to swim!

Cookies...

It's Girl Scout Cookie time again. I'm the cookie mom for Celina's troop this year.. Guess, we will have to sell a few boxes this year. I read 95% of the people, would buy cookies if only asked!! So, I'm asking.. if anyone wants to buy Cookies from Celina.. Please e-mail and I'll be sure to place your order. You can also donate cookies to the food shelf, freeze them, great for pie crusts and excellent to eat!!

We decorated sugar cookies with frosting & sprinkles, the girls did a flower with each girls talents or complements from each other.
